Route 2 Bean
Burger
Our Route 2 bean burger is popular not just with
vegetarians but with carnivores alike. It's incredibly delicious and
so simple to make.
Ingredients
1 onion, grated
2 cloves garlic, peeled, crushed and finely chopped
1 potato, boiled and grated
2 grated carrots
1 green pepper, finely chopped
½ chilli, finely chopped
Tin of chick peas
Tin of black beans
Mixed chopped fresh herbs
Salt and pepper
Flour, eggs, breadcrumbs
To serve
Lemon and chilli mayo (mayo mixed with lemon juice and finely chopped
fresh red chilli)
Method
Fry off onion and garlic. Remove to a large
mixing bowl. Add the grated potato, carrots, green pepper, chilli. Strain
and wash beans, add all together, mash and mix well. Form into 4 burgers,
pressing hard to make burger shapes. Place in the fridge to chill. When
ready to cook, remove from the fridge. Pat each burger first in flour,
then in beaten egg, then in breadcrumbs. Gently fry until browned and
cooked through. Serve in a bun together with lemon and chilli mayo.
